Under the direction of Chef and co-owner Stamatis Skriabas, Onuki introduces a contemporary gastronomic concept to the city—one that distills the authenticity of Japanese cuisine through technical mastery, seasonality, and timeless simplicity.
The restaurant’s meticulously curated beverage program features rare Japanese whiskies, small-batch shōchū, and premium sake. Complementing these selections is a signature cocktail list distinguished by refined aromatic accents such as yuzu, shiso, and seasonal blossoms.
Designed by the internationally acclaimed studio Yabu Pushelberg, the interior combines Japanese minimalism with the modern urban character of Athens. Clean architectural lines, abundant natural light, and a seamless flow—from the open kitchen to the poolside area—create an environment that elevates the holistic hospitality experience. Private dining spaces on the second floor further enhance discretion, offering an ideal setting for business engagements or social gatherings.
The opening of Onuki coincides with the phased activation of operations at THE ILISIAN, the transformed former Hilton Athens. The project, undertaken by Ioniki Ξενοδοχειακαί Επιχειρήσεις S.A., represents an investment exceeding €275 million (pre-VAT) and is designed to create a new urban landmark. The development includes:
